History of Knife Sharpening according to a study done by the University of Colorado at Boulder, November 10 2014

 As long as humans have used knives, we've needed ways to sharpen them. Prehistoric people developed a method of sharpening tools and stone knives at least 75,000 year's ago.  Western style knife-sharpening, however, can be directly traced back to the "moletas" of Northern Italy ,The moletas were knife grinders who traveled from village to village offering their sharpening services, They originated in the valley of Val Rendena in Italy's Dolomite Alps, and the first one landed in America in 1886. Within 3 decades hundreds more had joined him. Unfortunately, the moletas in America fought over knife-grinding territories just like they had in Italy, in 1930 the Knife Grinders Association was founded in order to settle these disputes. Now moletas are all over the world.

Knife sharpening is in our blood. For millennia our ancestors have been leading the edge in the field. 

This is my Grandfather in Rotterdam's streets in 1938 sharpening with his push cart and picture with my grandmother, dad and aunt next to his shop. He later returned to northern Italy after his shop was destroyed during bombing in World War II.

    Generations of experience

           Sharp knives, a must for everyone; but where does a sharp knife come from? In the last 100 years, industrial knife sharpening has taken a place in the modern world. However, the art of professional knife sharpening began in the remote Val Rendena of Italy. As members of the Povinelli family, this valley is the home and epicenter of our genetics and profession. 

           For centuries, the Moleta of our valley (moleta is the Italian word for knife sharpener) have been grinding knives for a living. Until the last century, these men often had a cart with a peddle operated grinding wheel; knives were sharpened on site. 

    When my grandfather Valentino Povinelli emigrated to the U.S in the 1950s, he brought the knowledge of knife sharpening with him. Through hard work and discipline, he was able to establish a knife sharpening route, providing restaurants and kitchens with the finest cutlery. Without his ambition and legacy, this website would not exist.

    His son, Alfred Povinelli, built the knife sharpening route into an empire, servicing restaurants throughout all of Michigan.

          Today, with your purchase, the legacy of sharp Povinelli knives continues. When you pick up a Povinelli knife, be careful. It will be razor sharp.
